I would like to use Blu-ray with HDMI output only, e.g. LG BP175, to feed video and audio to Insignia TV NS-40D510NA21 and get audio from TV's optical audio output and feed it to AV receiver. Will it work?

I’m wanting to make sure I’m understanding what you’re trying to do here. What I’m hearing is you want to connect your TV to a blue-ray player and then play audio for what you’re watching on the blue-ray through an AV receiver to (maybe) a separate audio system. Is that correct?
