Most electronic items, including ipod touches, have a 1 year manufacturer's warranty. These warranties usually only cover is something is defective with the item. I don't know of any kind of extended warranty that will cover an item being stolen.
If you signed up with Apple for their apple care program, you might be covered, but you'd have to double check with Apple on that information to find out for sure.
Even the Geek Squad Black Tie Protection does not cover if the item is lost or stolen.
Sorry to be the bearer of bad news, but that's the way I know things to work.
