For starters I don't think a laptop would suit you unless it has front and rear cameras. A tablet with a reliable and high quality stand can help in this manner.
I don't know what your professors policy on wearing sunglasses but they actually have glasses that function as a 1080p camcorder. Of course you may feel a little silly in class rather than stylish or accomplishing the purpose you may need. More suitable for the outdoors or when you are in your car and someone drives not too careful on the road.
If you already have a Cellphone and a reliable battery, consider getting a stand that you can place on the desk and then record the video. You would need at least a 64gb memory card if you plan on taking high quality audio and video. And also have an outlet nearby too.
All things set aside there are mini camcorders and tripods you can buy and take the memory card from the camcorder and download the video to the computer.

First you should inquire of the instructor if they are ok with it.
I would simply go with a camcorder
