So I preordered several games on September 11 and I have not been refunded back from the authorization hold. Do the weekends not count? I paid using a debit card.

Authorizations act as a sort of digital check-in for the card that was placed on file for an order. This ensures that payment will be able to be collected once the order has been shipped or is ready for pickup. In most cases, an authorization will stay in place until the order is fulfilled. Sometimes, an extended wait time for the order's fulfillment or a modification to the order will cause an authorization to drop, but it will typically be reapplied right away.

On a side note, I mean if what you say is true, why not just charge preorders instead of doing an authorization hold?

All online orders that are processed using a debit or credit card go through an authorization process. If you would like the order to be charged right away (I can see how some customers would like to keep track of their finances in such a way), I would recommend using a gift card, PayPal, or placing your order through the register system at the store.
