I currently have a 36" wide otr microwave oven that needs to be replaced.  It seems that all microwaves now are 30".  If I install one of these, there will be 3"gaps on each side of the microwave.  Does anyone know if there faceplates or something that would fill in those gaps if I get a 30"?  Thanks

You could try the place where you purchased your cabinets and ask for trim pieces  .  Or if you find a place that sells cabinets that closely resemble yours in color.

There are still a few 36" microwaves out there.

Also, I don't know if it's redundant, but you can look for trim kits for your OTR as well.

Check for places which sell cabinets that are a kind of similar to the color of your OTR Microwave.
