I have a new TV that has a single optical wire audio signal output and an amplifier for my sound system with RCA type connector inputs. Is there a converter that I can use to make the connection?

When posting connection issues, it is always beneficial to post the brand and model number of the units involved.

There are devices designed to do the digital-to-analog duty you seek, but I don't consider this a cost effective option.  The money is better spent to modernize the audio setup.

If it's the single digital coax connector you can use this:

If you mean stereo analog:
