I've never gone to a midnight release before, so I'm not 100% sure how they work. To get Skyrim at midnight, would I have had to pre-order it?

Not unless they have more pre-orders than stock on hand...

Doubt it. But the above poster is correct if they have more preorders then stock that was sent then your not going to get it.

With this game I highly doubt that would happen though.

Stores will have plenty of copies of the standard available for those who didn't pre-order, however if you want the pre-order incentive item which is a cloth map, then you would want to pre-order it.
