It's says install on 1 gaming system, so I was wondering. What if I installed the digital download on the 1st vita I owed, and then once I beat the game, could I uninstall it and install it on a 2nd vita system I owed? Or can it only be used on the 1st vita from now on?

you can have a game on up to 2 sytems, after the recent changes sony has done to their policy to limit those that game share.

At least this is on the ps3, i can't tell you for sure if this applies to the vita as well as i only own 1

But just rember to deactivate your vita  from your account  just to be safe

thanks for the help, i was just wondering because we are getting a 2nd vita but not till xmas for my son. So i was wondering if it would be worth it to get the digital download of games instead of the physical game itself.

well physical is always better, becuase when you get bored of a game you can always sale it, trade it or lend it.

as opposed to a digital copy which you can't
